Museum of Ice Cream (MOIC) has teamed up with iconic local brands Tai Hua and Denzy to introduce an innovative twist to the world of frozen desserts: Gelato made with soy sauce.
This unexpected pairing delivers a perfect blend of sweet, savoury, and umami flavours, offering a unique taste experience that challenges traditional dessert boundaries.
The soy sauce gelato combines the creamy, rich texture of traditional gelato with the deep, savoury notes of soy sauce. Carefully balanced, the recipe ensures the soy sauce complements rather than overpowers the sweetness of the dessert.
Salted caramel bits are added for texture, creating a sophisticated flavour profile that will appeal to adventurous foodies and dessert lovers alike.
“I drew inspiration from fine dining applications where they would make soy sauce caramel and I thought that was a good way to start”, said Damien, founder of Denzy Gelato. “We wanted to create something that surprises people and redefines their understanding of what gelato can be.”
The exclusive collaborative treat is available only from 3 January to 3 February 2025 at MOIC.
Made with selected premium soy beans, Tai Hua’s signature soy sauce is familiar to locals since its inception more than 70 years ago. This well-loved product has now been infused into a gelato, which has been launched to coincide with the Year of the Snake.
Those seeking an additional punch of flavour, can add a sprinkling of moromi dust (a by-product of soy sauce production).
This unique treat blends perfectly with MOIC’s whimsical and interactive experiential playscape and epitomises MOIC’s continued efforts to support local brands and businesses.
