Tandoori Festival showcases aromatic North Indian creations

From 13 to 26 January 2025, Tiffin Room presents its Tandoori Festival, a thoughtfully curated multi-course experience showcasing an array of aromatic North Indian creations cooked to perfection in the tandoor, a traditional clay oven with origins that can be traced back to the ancient Indus Valley civilisation.

The annual Tandoori Festival is Chef de Cuisine Kuldeep Negi’s (below) homage to the art of tandoori cooking, featuring an impeccable selection of meats, seafood and vegetables expertly prepared in the tandoor. Indulge in a delightful medley of Chef’s renditions of well-loved North Indian cuisine.

Enhance the experience with a curated flight of alcoholic beverage pairings, thoughtfully selected by Raffles Hotel Singapore’s expert sommeliers.

Begin the meal with Bhatti Ki Macchi — a refined reinterpretation of the traditional dish, which is conventionally prepared with chicken. At Tiffin Room, premium black cod takes centre stage, its delicate flavours perfectly complemented by papaya murabba, a sweet and tangy chutney made from raw papaya adds a unique dimension of flavour.

The dish’s spicier profile and signature smoky aroma, imparted through the tandoor, are sure to pique the senses. This dish is paired with a refreshing La Margarita, featuring Volcan Tahona Blanco and lime juice, delivering a perfectly balanced blend of tart and smoky notes.

For the main course, savour a selection of tandoori delights. Starting off with the Tandoori Bater, a delicately grilled quail perfumed with rose and spices, perfectly paired by the subtle sweetness and gentle heat of jackfruit naan.

Next, indulge in Tandoori Malai Crab, a creative reinvention of fresh crab marinated in a creamy blend of cheddar cheese and yogurt, complemented by slow-cooked and grilled pumpkin, adding a touch of earthiness to its rich profile.

Accompanied by a glass of bubbly, the effervescence cuts through the richness of the dishes while elevating their flavours and textures, setting the stage for a truly memorable experience.

Enjoy the Highway Murgh Tikka, this classic showcase succulent chicken leg kebabs simmered in aromatic spices, served with a refreshing side of baby turnip salad, mint, and yogurt.

Conclude on a high note with Chateau Marsyas, a full-bodied wine from Lebanon’s Bekaa Valley, offering a vibrant and fresh contrast to the smoky tandoor flavours.

Guests may also opt for a vegetarian menu, which mirrors the dynamic flavours and creativity of the non-vegetarian offerings, showcasing plant-based ingredients as the stars of each dish.

The journey unfolds with Bhatti Ki Galouti, pan-seared vegetable patties delicately flavoured with mint and black pepper, accompanied by papaya murabba.

The Makai Aur Mattar Seekh follows; a vibrant kebab of sweet corn and green peas, seasoned with rose and spices and served alongside spiced jackfruit naan.

In place of tandoor-cooked meats, enjoy a medley of vegetables and cheese: Tandoori Malai Broccoli, featuring charred, tender florets and Highway Paneer Tikka, showcasing traditional Indian cottage cheese kebabs with a smoky finish.

A glass of Markus Molitor Zeltinger Himmelreich Kabinett Riesling beautifully complements these dishes, offering a light sweetness and a refreshing tang to the palate.

Complete the experience with Malabar Lamb Boti, succulent lamb grilled to perfection with Malabar spices, or Malabar Gobhi, tender cauliflower expertly grilled in the tandoor, a delightful choice for vegetarian guests. Both dishes are served nestled on flaky Malabar Parantha.
