Tiffin Room’s masterfully curated Holi menu

Enjoy Holi – India’s Festival of Colours – through a spread of North Indian specialities at the historic Tiffin Room at Raffles Hotel Singapore.

The dishes have been masterfully curated by Chef de Cuisine Kuldeep Negi.

The menu, titled The Joyous Flavours of Holi, is available only from 5 to 19 March 2022 in both vegetarian and non-vegetarian options, alongside a wine-pairing option.

The delicacies are avaialable for lunch and dinner, with main courses presented in the classic Tiffin Box.

For starters, there is the spicy tandoori-grilled chicken, Tangdi Kebab, and crispy prawn fritters, Jhinga Till Pakora.

The main course includes the Tawa Fish, a flavourful pan-seared barramundi served alongside refreshing mint and coriander paste; Darbari Gosht, succulent lamb chop in an aromatic cardamom curry; and Murgh Lazzez, tender chicken breast in a rich almond and cashew nut gravy.

The vegetarian menu features starters such as Mushroom Till Pakora, crispy mushrooms with sesame seeds, and black chickpea cutlets Channa Dal Tikki.

The mains include Paneer Prunes Kofta Curry, creamy cottage cheese dumplings stuffed with prunes in tomato gravy; and Chatpate Aloo, potatoes tossed with an aromatic spice blend.

Both menus are served with Indian Basmati rice as well as Masala Charmagaj Naan and Laccha Parantha, alongside an array of chutneys and pickles.

The dessert ranges from an assortment of Paan Rasgulla, delectable betel leaf flavoured cheese dumplings; Pista Gujia, traditional sweet dumplings stuffed with coconut and dried fruits; to Gur Parre, enticingly crispy sweet bites made from jaggery.

“With an intention to present North Indian delicacies inspired by Holi, I wanted to showcase the vibrance and essence of the celebration through relished sweet and savoury delicacies that are popular in North India,”  Chef  Negi (below) told Inside Recent.

“For this menu, I incorporated specialities I hold close to my heart. I was inspired by the vibrant colours of North Indian dishes. For example, the Dahi Bhalla Papdi Chaat is a colourful medley of colours and flavours – the earthy mildly spiced lentils form the base of the dish and it is balanced by the sweet and tangy notes from the yogurt and tamarind chutney.

“Other key highlights in the menu include the Tawa Fish, a flavourful pan-seared barramundi paired with a refreshing mint and coriander paste, as well as the Darbari Gosht, succulent lamb chops in an aromatic cardamom curry.

“The vegetarian dishes are just as delectable with flavourful mains such as the Paneer Prunes Kofta Curry, creamy cottage cheese dumplings stuffed with prunes in tomato gravy. No celebration is complete without Paan Rasgulla, Pista Gujia, and crispy sweet Gur Parre for dessert.”

Both the vegetarian and non-vegetarian items include staple ingredients native to North Indian cuisine such as chickpeas, lentils and coconut milk, as well as dried fruits and piquant spices like cumin, coriander seeds and red chillies.

“The robust combination of flavours is complemented by freshly made chutneys made with different fruits to form perfectly balanced condiments integral to each dish,” said Chef Negi.

“The Joyous Flavours of Holi menu was derived from my personal recollection of Holi celebrations over the years. I believe that the gastronomic experience perfectly captures the warmth and vibrance that I wish to translate in each dish.”

His favourite dish is the Darbari Gosht. “Its rich flavours and combination of spices really appeal to me,” he said.

To elevate the culinary experience, Tiffin Room offers complementary wine pairings (S$58++), which are available for both non-vegetarian and vegetarian options.

A limited selection of the regular Tiffin Room a la carte menu will be available during this promotional period.
